Winn-Dixie Signature Recipe

Roasted Garlic & Red Pepper Party Dip

Cooking Time: 30 min.
Serves: 6

Ingredients:

4 head Garlic, raw -- whole, unpeeled or 3 unpeeled whole elephant garlic bulbs
1 tablespoon Oil, olive
1 lb Cheese, cream -- room temperature
3/4 cup Yogurt, plain, low fat
12 oz Peppers, sweet, red (bell), roasted, canned or jarred -- drained, coarsely chopped
1/2 cup Onions, spring or scallions (green onions), raw -- (tops and bottoms), chopped
1 pinch Pepper, red, flakes/crushed
1 dash Pepper, red or cayenne

Preparation:

1. Preheat oven to 400 degrees.

2. Lightly brush outside of garlic bulbs with olive oil and place in shallow baking pan.

3. Roast uncovered on center rack for 30 minutes. Cool.

4. Press roasted garlic out of cloves. Set aside.

5. Mix cream cheese and yogurt until creamy.

6. Add remaining ingredients, except for dash of pepper, and mix well.

7. Optional: Sprinkle with dash of red pepper before serving.

8. Suggested to serve with assorted chips.
