Winn-Dixie Signature Recipe
Veggie Omelet

Serves: 4
Ingredients:
2 cups egg substitute
½ cup sliced black olives
1 cup shredded low fat cheddar cheese
½ cup chopped onions
1 tomato
4 Tbsp salsa
½ cup green pepper, chopped
4 Tbsp Light sour cream
½ cup mushroom, chopped
Preparation:
1. Spray skillet with vegetable cooking oil spray. Turn heat on medium high.2. Pour 1 cup egg substitute in pan. Cook until egg firm on bottom. Flip.
3. Add half of the cheese and vegetables and fold over. Heat on each side until cooked.
4. Remove from heat and cut in half for two servings.
5. Repeat with remaining egg, vegetables and cheese.
6. Serve with salsa and sour cream.
