Winn-Dixie Signature Recipe
Barba Yianni's Grilled Lamb Chops

Ingredients:
3 1/2 lb Lamb, domestic, loin, chops, raw -- or rib chop, (3 1/2 lb - 4 1/2 lb), 3/4 to 1-1/4 inch thick, trimmed
MARINADE:
1/3 cup Oil, olive
2 whole Lemons, raw -- juice only
1/4 cup Oregano, ground (dried) -- or 1/2 cup chopped fresh
6 clove Garlic, raw -- chopped
1 teaspoon Salt
1/2 teaspoon Pepper, black, ground -- freshly ground
Preparation:
1. Nick edges of chops in several places to prevent curling.
2. In a small bowl, mix all marinade ingredients together into a paste and rub it all over the chops.
3. Place chops in a shallow bowl and cover with any remaining marinade. Marinate for about 2 hours at room temperature.
4. After marinating, grill over medium-hot coals for 3 to 5 minutes per side, depending on the thickness. The chops should register 120 to 135 degrees F at the thickest part for rare to medium-rare.
5. Set the lamb aside for about 5 minutes before serving.
