Winn-Dixie Signature Recipe
Easy Chicken Skillet Dinner
Serve with a green salad and crusty bread.
Preparation Time: 10 min.
Cooking Time: 35 min.
Serves: 4
Ingredients:
8 thigh Chicken, thigh, (boneless, skinless), raw -- (skinned)
1/4 cup Oil, vegetable
1/2 teaspoon Salt
1/2 teaspoon Pepper, black, ground
1 1/4 cup Water -- hot
1 cube Soup, Chicken broth or bouillon cubes, dry
15 oz Tomato sauce, canned, with mushrooms
1 lb Vegetables, mixed, canned, drained -- drained, or 2 cups frozen mixed vegetable blend
Preparation:
1. In large fry pan, place oil and heat to medium-high temperature. Add chicken and cook, turning and sprinkling with salt and pepper, about 5 minutes.
2. Remove chicken from pan and discard remaining oil.
3. Dissolve bouillon cube in hot water, add to fry pan, scraping to loosen pan drippings.
4. Add tomato sauce and mixed vegetables; bring to a boil, reduce temperature, cover and simmer about 25 minutes or until fork can be inserted in chicken with ease.
