Easy Fixin' Pot Roast

If you've never cooked a pot roast or don't have a lot of vegetables on hand, this tried and true recipe is sure to please.

Preparation Time: 15 min.
Cooking Time: 1 hour, 30 min.
Serves: 16

Ingredients:

5 lb Beef, bottom round, trimmed to 1/8" fat, all grades, raw
2 tablespoon Oil, vegetable
1 packet Soup, onion mix, dry form -- (1 1/3 oz packet)

Preparation:

1. Preheat oven to 400F.

2. Rub roast evenly with oil. Coat with soup mix.

3. Place in shallow roasting pan and bake for 1-1/2 hours or until desired doneness. For a medium roast look for an internal temperature of 140F on the meat thermometer.

4. If desired, add potatoes, turnips, carrots and celery approximately 45 minutes before end of roasting.

5. Let rest 10 minutes before slicing.
