Winn-Dixie Signature Recipe

Italian Seafood Stew

Delicious. Easy and Nutritious. Serve with crusty bread and a crisp green salad.

Preparation Time: 10 min.
Cooking Time: 25 min.
Serves: 10

Ingredients:

1 teaspoon Oil, olive, extra virgin
1 medium Onions, raw -- diced
4 clove Garlic, raw -- minced, or 2 teaspoon prepared diced garlic
1/2 cup Wine, table, red, dry
2 lb Tomatoes, stewed, Italian style, canned -- chopped, with juices
14 1/2 oz Soup, chicken broth, canned
1 lb Clam juice -- (bottled)
1/4 cup Parsley, Italian (flat-leaf), fresh -- chopped
1 leaf Bay leaf
1/2 teaspoon Pepper, red, flakes/crushed
1/2 lb Cod, fillets -- or other fillet, cut in 1 inch pieces
1/2 lb Shrimp / prawn, raw
1/2 lb Scallop, raw
10 oz Clam, baby, canned, drained -- drained and rinsed
1 dash Sauce, ready-to-serve, pepper, TABASCO -- or other hot sauce
1 pinch Pepper, black, ground -- to taste

Preparation:

1. In a large pot or wok, heat oil and cook onions until softened, about 3 minutes.

2. Add garlic and cook 1 minute more.

3. Add wine and boil to reduce slightly.

4. Add tomatoes with their juices, chicken broth, clam juice, parsley, bay leaf and red pepper flakes. Bring to a boil, then reduce heat to low and simmer 5-10 minutes.

5. Add cod, shrimp, scallops, clams. Simmer about 5 to 7 minutes or until fish is opaque at center. Season with Tabasco and black pepper and serve immediately.
