Lamb Shish Kebabs

Serves: 4
Ingredients:
1 1/2 lb Lamb, leg, boneless, lean, raw -- (preferably from the leg), cut into 1-inch cubes
1/2 lb Bacon, smoked -- whole slab, cut into 1 inch squares
2 tablespoon Cilantro -- optional
1 teaspoon Cumin, ground
1 teaspoon Paprika
1 teaspoon Pepper, black, ground
2 clove Garlic, raw -- large, smashed
1/4 cup Oil, olive, extra virgin
8 medium Mushrooms, button, raw
2 medium Onions, raw -- quartered
1 medium Peppers, sweet, red, (bell), raw -- cut into 1-inch squares
1 medium Peppers, bell, green -- cut into 1-inch squares
1 medium Peppers, sweet, yellow (bell), raw -- cut into 1-inch squares
Preparation:
1. Mix cilantro, cumin, paprika, garlic, and black pepper with olive oil and make into a paste.
2. Rub paste on lamb cubes.
3. Thread the lamb, bacon and vegetables on skewers, alternating the lamb and bacon with the onion and peppers, starting and ending with a mushroom.
4. Grill directly over medium-hot coals for 6 to 8 minutes, until the meat reaches 130 to 135 degrees for medium-rare to medium.
5. Lamb should be set aside for a few minutes before serving.
