Winn-Dixie Signature Recipe

Lobster Newburg

Preparation Time: 20 min.
Cooking Time: 25 min.
Serves: 2

Ingredients:

2 lobster Crustaceans, lobster, northern, raw -- live
6 tablespoon Ghee, (clarified butter)
1/2 teaspoon Salt
1 cup Cream, heavy whipping
2 tablespoon Wine, Madeira
3 large Egg, yolk, raw -- beaten
1 dash Pepper, red or cayenne

Preparation:

1. Boil lobsters until shells are barely red.

2. When cool, remove meat from shells and cut into small pieces. Put lobster pieces in saucepan with 1/4 cup butter and salt and saute lightly, turning lobster pieces to cook without browning. Remove lobster and set aside.

3. Pour the cream into the pan and bring to a boil. Reduce liquid by half.

4. Stir in the Madeira, bring back to boiling point, then remove from heat.

5. Stir some of the liquid into the beaten egg yolks and add to pan, stirring to make a slightly thick sauce.

6. Return lobster. Stir in the remaining butter and a little cayenne, and reheat without boiling.

7. Spoon lobster on plate and top with sauce.
