Marmalade Glazed Tenderloin

Try this delicious and easy to make pork tenderloin dish. Serve with wild rice mix and steamed asparagus for a delicious quick fix meal.

Preparation Time: 8 hours, 10 min.
Cooking Time: 20 min.
Serves: 4

Ingredients:

1 1/2 lb Pork, loin, tenderloin, raw -- 2 whole
1 cup Orange juice
1/2 cup Wine, table, white
2 tablespoon Soy sauce, low sodium (lite) -- or reduced sodium
1 clove Garlic, raw -- peeled and crushed, or 1/2 teaspoon prepared minced garlic
1 tablespoon Butter, with salt -- or olive oil
3 tablespoon Marmalade, orange
2 tablespoon Honey

Preparation:

1. Blend together orange juice, wine, soy sauce and garlic. Marinate tenderloin, covered in refrigerator, for 8-24 hours. Easy marinating tip: mix ingredients in reseal plastic bag, add pork and place resealed bag in refrigerator.

2. Heat oven to 425F.

3. Remove pork from marinade, add butter, marmalade and honey. Bring marinade mixture to boil, stirring constantly until slightly thickened, making basting glaze.

4. Roast in shallow roasting pan for 20-30 minutes until internal temperature, measured with a meat thermometer reads 155-160F - basting often with glaze. If desired, make extra marinade to serve as a gravy.

5. Slice and serve.
