Mediterranean Braised Beef

Preparation Time: 15 min.
Cooking Time: 2 hours, 15 min.
Serves: 8

Ingredients:

2 1/2 lb Beef, shoulder, English roast (Boston cut), boneless, raw -- 2 1/2 lb-3 lb
1/4 cup Flour, white, all-purpose, enriched, bleached
2 tablespoon Oil, olive
1/4 cup Vinegar, Balsamic
2 small Onions, raw -- halved and sliced
4 whole Shallots -- medium, sliced
1/4 cup Dates -- pitted, chopped
1/2 teaspoon Salt
1/4 teaspoon Pepper, black, ground -- 1/4 to 1/2 tsp
1 1/2 cup Water

Preparation:

1. Heat oven to 325 degrees.

2. Lightly coat beef pot roast with flour.

3. Heat oil in Dutch oven over medium heat until hot. Brown pot roast; remove.

4. Return pot roast. Add onions, shallots, dates, salt and pepper; bring to a boil.

5. Cover tightly and cook in 325 degree oven 2 to 2-1/2 hours or until pot roast is fork-tender.

6. Remove pot roast; keep warm.

7. Cook liquid and vegetables over medium-high heat to desired consistency.

8. Carve pot roast. Serve with sauce.
