Winn-Dixie Signature Recipe

Stuffed Whole Lobster

The King of Shellfish. Boiling is considered to be the best way to prepare lobster.

Preparation Time: 10 min.
Cooking Time: 50 min.
Serves: 4

Ingredients:

4 lobster Crustaceans, lobster, northern, raw
SEAFOOD STUFFING
1 pack NABISCO RITZ Crackers -- (1 sleeve)
1/2 lb Shrimp / prawn, cooked -- cooked cut chunks, thawed if using frozen
1/2 lb Crab meat, canned
8 tablespoon Butter, with salt -- melted, divided in half
1/4 teaspoon Pepper, black, ground -- coarse ground

Preparation:

1. Boil lobster: Punge the lobster headfirst into boiling water in very large stockpot. Bring water back to boiling; cook 20 minutes. Remove lobster from water; place lobster on backs on cutting board. Cut in half lengthwise, cutting to but not through the back shell. Draw knife from head down to base of body cavity. Discard all organs. Remove black vein that runs down the tail.

2. Spread lobster open.

3. Crumble crackers. Mix in shrimp, crabmeat and one-half of melted butter, and pepper.

4. Evenly divide the stuffing for each lobster. Fill the lobster cavity with stuffing. Top with remaining melted butter.

5. Place lobsters on baking sheet. Brush stuffed lobsters with melted butter.

6. Bake the stuffed lobsters in 350F oven for 25-30 minutes. Serve with cole slaw and potato.
