Cake Baking Tips
Try these simple tips for a fabulous cake.

- Bake on center oven rack.
- Preheat oven.
- Use correct pan size.
- Have ingredients at room temperature.
- Use proper measuring utensils for liquid and dry ingredients.
- Grease pans with shortening; lightly dust with flour. Don't grease pans for sponge-type cakes.
- Follow recipe instructions carefully.
- Stagger pans so they don't touch. If they're on separate racks, stagger them so air can circulate.
- To test for doneness, insert a wooden toothpick in the center; if it comes out clean, the cake is done.
- Cool cakes in pan: 10 minutes for layer cakes, 15 minutes for tube cakes. Invert onto wire racks to cool completely, then decorate.
