How to Carve Leg of Lamb
Set roast on platter with shank bone to carver's right. Cut lengthwise slices from thin side. Turn leg over so it rests on cut side. Make vertical slices down to leg bone. Cut horizontally along bone to release slices.

Glazes for Roast Lamb
Instead of using seasoning to flavor the lamb, simply brush it every 15 minutes with one of these glazes. Serve the remaining glaze as sauce.
Apricot Glaze: Heat 1/4 cup mint-flavored apple jelly until melted. Stir in 2 jars (4 3/4 ounces) strained apricots (baby food). Makes 1 cup.
Minted Glaze: Heat 1 jar (10 oz.) mint-flavored apple jelly, 2 cloves crushed garlic and 1 tablespoon water, stirring until jelly is melted. Makes 3/4 cup.
