How To Carve A Standing Rib Roast

Place roast with large side down on a platter. If necessary, remove wedge-shaped slice from large end so roast will stand firmly. To carve, insert fork below first rib. Slice from outside of roast toward rib side. After making several slices, cut along inner side of rib bone with knife. As each slice is released, slide knife under it and lift to plate.
