Substitution Tips

Try these simple substitutions if you're missing an ingredient.

When you're in the middle of a recipe and discover you don't have a certain ingredient, you can call on your next-door neighbor or run up to your convenient Winn-Dixie store. But sometimes, in a pinch, you may have to substitute with something right in your kitchen. Just follow this handy substitution list. Substitute only in an emergency, as results can vary.

When the recipe calls for: You may substitute:
1 cup cake flour ................... 7/8 cup sifted all-purpose flour
(1 cup less 2 tablespoons)
2 tablespoons flour ...............
(for thickening)
1 tablespoon cornstarch
1 cup self-rising flour ............. 1 cup all-purpose flour plus 1 teaspoon baking powder and 1/2 teaspoon salt
1 teaspoon baking .................
powder
1/2 teaspoon cream of tartar plus 1/4 teaspoon baking soda
1 tablespoon cornstarch ....... 2 tablespoons all-purpose flour
1 cup brown sugar ...............
(packed)
1 cup sugar or 1 cup sugar plus 2 tablespoons molasses
1 square unsweetened ......... chocolate 3 tablespoons unsweetened cocoa powder plus 1 tablespoon butter, margarine or vegetable shortening
2 large eggs ........................ 3 small eggs
1 egg .................................. 2 egg yolks (for custard)
1 egg .................................. 2 egg yolks plus 1 tablespoon water (for cookies)
1 cup sour cream ................. 1 tablespoon lemon juice plus evaporated milk to equal 1 cup
(will have thinner consistency)
1 cup yogurt ...................... 1 cup buttermilk or sour milk
(will create thinner consistency)
1 cup sour milk or ..............

1 tablespoon vinegar or lemon juice plus sweet milk to equal 1 cup, let stand 5 minutes
1 cup whole milk .................. 1/2 cup evaporated milk plus 1/2 cup water
1 cup honey ......................... 1 1/4 cups sugar and 1/4 cup water
1 teaspoon lemon juice ......... 1/2 teaspoon vinegar
1 cup tomato juice ................ 1/2 cup tomato sauce plus 1/2 cup water
2 cups tomato sauce ............. 3/4 cup tomato paste plus 1 cup water
1/4 cup chopped onion ......... 1 tablespoon instant minced onion
1 clove garlic ....................... 1/8 teaspoon garlic powder or 1/4 teaspoon instant minced garlic
1 tablespoon prepared ......... mustard 1 teaspoon dry mustard
1 tablespoon fresh-snipped .. herbs 1 teaspoon dried herbs or 1/4 teaspoon ground herbs
1 teaspoon dry mustard ........ 2 to 3 teaspoons prepared mustard
1 cup bread crumbs .............. 3/4 cup cracker crumbs
